Method
- It is a sauce, not melted cheese on toast. Butter and flour cooked out, then liquid, then the cheese off the heat.
- Mustard and Worcestershire are not optional — they are what make it rarebit rather than cheese sauce.
- Toast the bread on both sides first so it can hold the weight without going soggy.
- Under a hot grill until it blisters and browns in patches. It should be bubbling when it reaches the table.
