Method
- 2 oz tequila, 1 oz lime, ½ oz honey syrup — honey let down half and half with warm water first, or it will seize in the shaker.
- Shake hard, strain over fresh ice. Salt half the rim so you can choose.
- No orange liqueur. That is the whole idea: the agave is the sweetener, so the tequila is what you taste rather than a wall of Cointreau.
- It is also the version that shows you whether the bottle is any good, which is either the point or the risk.
