Method
- Fennel sliced and cooked slowly in oil until sweet — fifteen minutes on low, and it stops tasting of aniseed and starts tasting of sugar.
- Canned tomatoes in and cooked down hard before any water goes near it. Rushing this is why most tomato soup tastes tinny.
- Blend smooth, then cream off the heat if you want it.
- A pinch of sugar only if the tomatoes are sharp, and good oil over the top at the table.
