What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- eggs
- tomato
- scallion
- sugar
Good if you have them, fine if you do not: soy sauce.
Method
- Scramble the eggs first, on their own, and take them out while still loose and glossy. They finish later.
- Tomatoes into the same pan and cooked until they collapse and release their juice — that juice is the sauce.
- A pinch of sugar, which is traditional and which corrects the tomatoes' acidity rather than sweetening the dish.
- Eggs folded back in for the last thirty seconds. Cooked through twice, they turn to rubber.

What the method is trying to make happen
Sequence, correction, heat and texture, equipment workarounds, scaling, and component reuse are available with this cook sheet.
An educational plan from a curated corpus. Not a nutrition, allergen, or doneness guarantee.
Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
The technique underneath this
Going wrong while you cook it? Say what it is doing and the triage will tell you what is happening, the smallest move, and the instinct to resist.

Why each of these is on the list
What the ingredients are actually doing
- eggs
- The cheapest way to turn a side dish into dinner.
- tomato
- Sweet, sour and savory at once, which is why it holds up so many dishes with no meat in them.
- scallion
- Two ingredients on one stalk.
- sugar
- Not just sweetness — it balances acid and bitterness, which is why a sour drink and a tomato sauce both want a little.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Cottage cheese into the raw eggs looks wrong and cooks into the softest scramble you will make without cream.

Scallion eggs
Gentle heat. Scallion in the butter first so the eggs taste like allium, not just yellow.

Soy eggs over rice
The ten-minute floor of this whole library. A soft egg, hot rice, soy and sesame, and it is better than most things that take an hour.

Cook it, then tell the shelf what you used.
The ranking is only as honest as the shelf behind it. Empty the cream, and everything that leaned on cream should stop being offered.
