Method
- Steep the chili flakes in the pineapple juice for ten minutes, taste, then strain. Heat builds while it sits.
- Shake the pineapple hard so it foams — that head is half the pleasure of the drink.
- Tequila and lime in, shaken with plenty of ice.
- Chili salt on the rim if you want the heat twice. Sweet, hot and sour is a triangle that always works.
