easyWhy tonight. Roast sweet potato. Massage kale.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- sweet potato
- kale
- tahini
- lemon
Good if you have them, fine if you do not: almonds.
Method
- Cube the sweet potato small and roast it hot until the corners are dark. Big cubes steam in the middle and never crisp.
- Massage the kale with oil and salt while the potato roasts — it needs that minute of work to stop being tough.
- Tahini thinned with lemon and water, garlic grated into it.
- Almonds toasted dry in a pan and added at the very end so they stay crisp.

Why each of these is on the list
What the ingredients are actually doing
- sweet potato
- Sugar as well as starch, so it browns and burns faster than a potato does.
- kale
- Tough enough to need help.
- tahini
- Sesame paste that behaves like a fat and an emulsifier at once.
- lemon
- Acid you add at the end, not the start.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Shares kale, tahini, lemon
Kale with tahini
The kale at the back of the drawer. Massage it until it collapses, then dress it early — it is the one green that improves sitting in dressing.
Shares tahini, lemon
Tahini yogurt sauce
The sauce that turns roasted vegetables into dinner.
Shares tahini, lemon
Tahini cucumber
Salt and drain the cucumber first or the sauce thins to nothing. Pour the tahini under it, not over, so it stays crisp against the fork.
Shares kale, lemon
Lemon kale with parmesan
The expiry-first salad. Massage kale with salt, lemon, and oil until it darkens. Parmesan is fat, not a garnish.
