Method
- Wilt the spinach and squeeze it genuinely dry. Wet spinach turns ricotta into a grey puddle and nothing rescues it.
- Beat the ricotta smooth with salt and lemon zest first — thirty seconds and it stops being grainy.
- Loosen it with hot pasta water in the serving bowl before the pasta arrives, so it becomes a sauce.
- Never heat ricotta directly. The pasta's own heat is all the cooking this sauce gets. Nutmeg at the end.
