Method
- Boil pasta in well-salted water. Save a cup of the starchy water before you drain.
- Melt butter in a wide pan. Add grated garlic if you have it and let it just perfume the fat.
- Toss pasta in the pan with lemon juice, zest, a splash of pasta water, and parmesan off the heat.
- Loosen until it coats. Taste for salt and acid. The lemon should finish bright, not sour.
