Method
- A shrub first: equal weights of berries and sugar left to macerate a day, then an equal volume of cider vinegar, strained after three more days. It keeps for months.
- 1 oz of that over ice, soda to top.
- The vinegar is the point. It gives an alcohol-free drink the sharpness and the length that alcohol usually provides.
- It tastes aggressive from the bottle and correct in the glass. Judge it diluted, never neat.
