Method
- Brown the sausages whole, then out and sliced. Sliced first, they give up their fat and go dry.
- Onion and rosemary in that fat, then tomato cooked down hard before the beans arrive.
- Beans with some of their liquid, then twenty minutes at a low simmer so they go creamy at the edges.
- Kale in at the end for two minutes. Vinegar to finish — a fatty pot needs acid more than salt.
