Method
- This is not a curry that stays wet. It is cooked until the coconut milk breaks and the beef fries in its own oil.
- Three hours at least, uncovered for the last hour, stirred so the base does not catch.
- You are looking for the moment the liquid goes and the meat starts to darken and glaze. That is rendang.
- Stop before it dries out entirely. It should be deeply brown and coated, not saucy and not powdery.
