What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- rum
- pineapple
- orange
- coconut milk
Method
- 2 oz dark rum, 4 oz pineapple, 1 oz orange, 1 oz cream of coconut. Shake with ice and pour over crushed ice.
- Cream of coconut, which is sweetened, not coconut milk, which is not. Getting this wrong is the usual failure.
- Grate fresh nutmeg over the top, generously. It is not a garnish; it is the fourth flavor.
- It is very sweet by design. More lime is the fix if it is too much, not less rum.

Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Why each of these is on the list
What the ingredients are actually doing
- rum
- The widest spirit on the shelf.
- pineapple
- Sweet and aggressively acidic, and the raw fruit contains an enzyme that breaks down protein — useful in a marinade, ruinous in anything set with gelatin.
- orange
- Sweeter and rounder than lemon and lime, so it softens rather than sharpens.
- coconut milk
- Fat that carries chili and spice further than water can, with a sweetness underneath.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Rum, coconut and pineapple lengthened with soda, so it drinks long rather than thick. A piña colada that will not put you to sleep.

Rum, pineapple, coconut. Make it with real coconut cream and fresh pineapple and it stops being a joke drink.

Batida de coco
Brazilian coconut batida without cachaça: rum, coconut, lime. Shake. Not a piña colada.
