Method
- Build the sofrito first — onion and tomato cooked down until dark and jammy. That is the flavor base and it cannot be rushed.
- Rice stirred through the sofrito, then stock added all at once and spread flat.
- Do not stir it again. Stirring makes risotto; leaving it alone makes the crust on the bottom, which is the point.
- Listen for the crackle at the end and let it go a minute past it. Rest it off the heat under a cloth for five.
