Method
- Fry the curry paste or powder in a little of the thick coconut cream until the oil separates out. That splitting is deliberate and it is the base.
- Peanut butter loosened separately with hot liquid before it goes in, or it clumps.
- Potato and chicken simmered gently in the rest of the coconut milk — never a hard boil, which splits it for good.
- Cinnamon and lime at the end. It is the mildest and sweetest of the curries and the acid keeps it from cloying.
