Method
- Three ingredients and no gelatine — the lemon acid sets the cream on its own, which is the whole trick.
- Boil the cream with the sugar for three full minutes. Under-boiled, it will not set.
- Lemon juice off the heat and stirred in, then poured immediately before it starts to thicken.
- Three hours in the fridge minimum. Berries and something crisp alongside, because it is very rich.
