Method
- Crush the berries with sugar and leave them fifteen minutes to release syrup.
- Whip the cream to soft peaks only. Stiff cream goes grainy and refuses to fold.
- Fold everything together in two or three passes so it stays streaked rather than uniformly pink.
- Assemble within ten minutes of serving. Given longer the meringue dissolves and the point is gone.
