easyWhy tonight. Kofta flavors, beef, no special grind.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- beef
- cumin
- onion
- pita
- yogurt
Good if you have them, fine if you do not: mint.
Method
- Grate the onion rather than chopping it, and squeeze out the juice. Wet onion makes kofta that fall apart on the pan.
- Mix with your hands and stop as soon as it comes together — overworked meat goes springy.
- Fry a teaspoon and taste it before shaping the rest. Cumin is easy to under-do here.
- Sear hard and fast, warm the pita so it opens rather than tears, yogurt and mint at the table.
An educational plan from a curated corpus. Not a nutrition, allergen, or doneness guarantee.
Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Why each of these is on the list
What the ingredients are actually doing
- beef
- Fat and connective tissue decide the method.
- cumin
- Earthy and slightly bitter, and it needs heat to open.
- onion
- The base under most of this library.
- pita
- A pocket or a plate depending on how you treat it.
- yogurt
- Acid and creaminess together, which is why it works as a sauce with no cooking at all.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Koobideh
Grated onion in the meat until it is wet, cumin, a hot pan. Sumac and yogurt after. Don't make a hamburger. It should taste like a kebab stall.

Turkish köfte skillet
Grated onion in the meat, cumin, a lot of parsley. Flatten, hard sear. Yogurt and pita, not a burger bun. It should taste like a kebab shop, not a meatball.

Ropa vieja sandwich
Yesterday's ropa on bread. Peppers and onion still in it. Don't microwave the beef dry. A sandwich is how the pot gets a second night.

Beef and peppers skillet
Hard sear. Don't stew the beef unless you mean chili.
