Method
- Make the batter ahead: soft butter beaten with brown sugar, cinnamon and a pinch of salt. It keeps for weeks in the fridge.
- A heaped spoon of it in a warmed mug with 2 oz dark rum, topped with hot — not boiling — water.
- Stir until the butter has entirely gone. Undissolved butter floats as an oil slick and it is unpleasant.
- The salt in the batter is what stops it tasting like a dessert, and leaving it out is the usual mistake.
