easyWhy tonight. Sauce is yogurt and herbs, not mayo.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- eggs
- yogurt
- parsley
- lemon
Good if you have them, fine if you do not: dill, bread.
Method
- Yogurt spread on the plate first, seasoned with salt and lemon and left to come up from fridge cold. Cold yogurt under hot eggs is unpleasant.
- Herbs chopped fine and stirred through the yogurt, not scattered on top, so every bite gets them.
- Eggs soft — poached or a loose scramble — laid onto the yogurt.
- Olive oil poured over the top at the end, generously. It is what carries the herbs and it makes the plate look finished.

Why each of these is on the list
What the ingredients are actually doing
- eggs
- The cheapest way to turn a side dish into dinner.
- yogurt
- Acid and creaminess together, which is why it works as a sauce with no cooking at all.
- parsley
- Not a garnish, a green note.
- lemon
- Acid you add at the end, not the start.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Cook it, then tell the shelf what you used.
