Method
- Five-spice is powerful and one-note in quantity. Half a teaspoon for a whole bird, not a tablespoon.
- Marinate at least two hours so the star anise and cinnamon get past the surface.
- Sear or roast dry first, all the way to real color, before any honey goes on.
- Honey in the last five minutes only, or it burns black before the chicken is cooked.
