mediumWhy tonight. Cook the fennel properly soft first or it stays crunchy and aniseedy under the eggs. Ten minutes, and it turns sweet.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- eggs
- fennel
- tomato
- olive oil
Good if you have them, fine if you do not: feta.
Method
- Slice the fennel thin and cook it in olive oil for a good ten minutes until it is soft and sweet. Raw fennel stays crunchy and aniseedy in a bake.
- Tomatoes in and cooked down until the pan is thick rather than watery.
- Wells made with a spoon, eggs cracked in, lid on, lowest heat.
- Pull it while the yolks still move. Feta over at the end, and the fennel fronds if the bulb came with them.

Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Why each of these is on the list
What the ingredients are actually doing
- eggs
- The cheapest way to turn a side dish into dinner.
- fennel
- Anise, and it moves a long way with cooking.
- tomato
- Sweet, sour and savory at once, which is why it holds up so many dishes with no meat in them.
- olive oil
- Two ingredients sharing a name.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Tomato fennel salad
Only in tomato season. Salt the slices first and let them weep on the board — that liquid is half the dressing.

Baked feta eggs
The block of feta and a tin of tomatoes. Push the cheese in whole so you get molten pockets, and pull the eggs while the yolks still move.

Piperade
Basque pepper stew, eggs in at the end, ham if you have it. Soft, not a scramble. It should taste like peppers, not a Western omelette.
