Method
- Fry or bake the pita until it genuinely snaps. Fattoush is a bread salad and soggy bread is the whole failure mode.
- Salt the tomatoes on the board first and let them weep — that liquid is part of the dressing.
- Sumac in the dressing rather than sprinkled on top, so it distributes. It is the sour note the salad is built on.
- Bread added at the very last second. It should still crack when you eat it.
