Method
- Strain salted yogurt in a cloth overnight. It halves in volume and that is what makes it labneh rather than yogurt.
- Spread it thick with a spoon-back swirl to hold the oil.
- Very good olive oil, generously. It is one of three ingredients and the one people skimp on.
- Cucumber, mint and lemon at the end, warm pita alongside. Za'atar if you have it.
