Method

  1. Filling cooked and then cooled completely, ideally overnight. Warm filling melts the fat in the dough and the seal fails in the oven.
  2. Chopped hard-boiled egg and something sweet or briny folded in cold.
  3. Under-fill. Two tablespoons, not three, and wet the rim with water rather than egg.
  4. Fold, press with a fork or crimp with your thumb, and cut one small vent. Egg wash, hot oven, and any that leak were overfilled rather than badly sealed.
