Method
- Char the corn in a dry, screaming pan until some kernels are genuinely black. Frozen corn works and goes in frozen.
- Take it off the heat before the mayonnaise goes in, or the mayonnaise splits into oil.
- Lime and chili stirred through while warm, feta crumbled over at the end.
- It is elote off the cob, which means every bite gets everything instead of the first two inches getting all of it.
