Method
- Couscous is not boiled. Equal volumes of couscous and boiling salted stock or water, lid on, off the heat, ten minutes.
- Then fork it through with olive oil to separate the grains. Skipping this leaves you with a block.
- Roast the vegetables hard and separately, so they have color rather than steam.
- Lemon over everything at the end and more oil than seems polite. Couscous is dry and drinks it.
