easyWhy tonight. Simmer rice in coconut. Shrimp at the end.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- shrimp
- rice
- coconut milk
- lime
- ginger
Good if you have them, fine if you do not: cilantro.
Method
- Cook the rice in coconut milk let down with water, never coconut milk alone — undiluted it scorches on the base.
- Ginger and garlic softened in the pot before the rice goes in, so the whole pot is seasoned rather than the top.
- Shrimp cooked separately, hard and fast, ninety seconds a side. They must not simmer in the pot.
- Lime off the heat at the very end. Coconut and shrimp are both sweet and the acid is doing the work.

Why each of these is on the list
What the ingredients are actually doing
- shrimp
- Cooks in about two minutes and is ruined in three.
- rice
- Starch that either steams or fries, and the two want opposite things.
- coconut milk
- Fat that carries chili and spice further than water can, with a sweetness underneath.
- lime
- Sharper and more floral than lemon, and it fades faster — juice it the same hour you use it.
- ginger
- Bright and hot when raw, mellow and warm when cooked.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
