Method
- Warm milk, not hot. Above about 50C it kills the yeast and the dough will never rise.
- Knead until the dough is smooth and springs back — eight minutes by hand, and under-kneaded dough tears rather than stretches.
- Roll it thin and tight. A loose roll unwinds in the pan and the middle goes doughy.
- Bake them touching in the skillet so the sides stay soft and only the tops brown.
