Method
- Brown the chicken skin-side down first and take it out. That rendered fat is what the farro cooks in.
- Onion and thyme in the fat, then the farro toasted through it before any stock.
- Stock in, chicken back on top skin above the liquid, then into the oven uncovered.
- Skin above the liquid is the whole trick — submerged it goes flabby and the dish loses its best part.
