Method
- Roast the cauliflower with cumin until it is nearly too dark. This dish is built on that char and nothing else replaces it.
- Tahini let down with lemon and cold water past the point where it seizes — it goes stiff and pale first, then smooth.
- Sauce on the plate, cauliflower on top, so it does not go soft sitting in it.
- Parsley and more lemon at the end. Tahini is heavy and it needs the acid twice.
