Method
- Onion, garlic and chili softened in oil until fragrant.
- Spinach in by the handful, letting each collapse before the next, until it has given up its water and the pan is dry again.
- Coconut milk in and simmered fifteen minutes until it thickens and turns from white to pale green.
- Salt hard and finish with lime. Coconut is sweet and flat without acid, and this is the step most versions skip.
