Method
- This is a one-pot pilaf built on biryani's flavors, not a layered biryani — that takes a day and two separate cooks.
- Whole spices bloomed in fat first: cumin seeds and a cinnamon stick until they smell of themselves.
- Onion browned properly — fifteen minutes to genuinely dark, which is where the sweetness and color come from.
- Rice stirred through the fat, chicken on top, stock in, lid on, lowest heat. Do not lift the lid, and rest it ten minutes off the heat.
