Method
- Barley takes 40 minutes and it will not be hurried. Cook it in salted water or stock and start it before anything else.
- Mushrooms browned hard in a separate pan, in one layer, untouched until they have released their water and gone past it.
- Thyme in with the mushrooms at the end, not the start. Dried herbs early, fresh herbs late.
- Combined off the heat with olive oil and parmesan. Barley is nutty and chewy and wants fat more than it wants sauce.
