Method
- Render the pork slowly from cold so the fat comes out and the pieces crisp. That fat is the sauce base.
- Take the pork out before the tomato goes in, and return it at the end, or it goes soft and loses the point.
- Tomato cooked in the rendered fat until it darkens and thickens.
- Pecorino rather than parmesan, off the heat. No onion, no garlic, no cream — the whole dish is pork, tomato, chili and cheese.
