Method
- Whole cumin seeds into hot oil first and left until they crackle and darken — thirty seconds, and that bloom is the whole base.
- Ground turmeric after, off the direct heat, because it burns in seconds and burnt turmeric is bitter for the entire pan.
- Potato in before the cauliflower — it takes roughly twice as long, and adding them together is why most versions are half raw and half mush.
- It is a dry curry, not a stew. Lid on to steam through, then lid off so the pan dries out and the edges catch.
