easyWhy tonight. Roast the sweet potato until the edges catch.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- sweet potato
- black beans
- tortillas
- lime
Good if you have them, fine if you do not: feta, cabbage.
Method
- Cube the sweet potato small and roast it hot until the corners are dark. It is sweet, and color is the only thing that balances that.
- Beans warmed separately and seasoned on their own, not roasted alongside — they dry out and split.
- Cabbage shredded thin and dressed with lime and salt fifteen minutes ahead so it softens slightly.
- Tortillas charred dry, then built shallow. Feta and lime at the end: salt and acid against the sweetness.

Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Why each of these is on the list
What the ingredients are actually doing
- sweet potato
- Sugar as well as starch, so it browns and burns faster than a potato does.
- black beans
- Earthier and firmer than white beans, and they hold their shape where white beans go creamy.
- tortillas
- They want direct heat before they go anywhere near a plate.
- lime
- Sharper and more floral than lemon, and it fades faster — juice it the same hour you use it.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

The slaw is the filling, not the garnish. Shred it thin, dress it twenty minutes ahead, and it softens without ever collapsing.
