Method

  1. It has a reputation as a sweet tourist drink because it is almost always made badly and from a mix.
  2. Gin, pineapple, lime and Cointreau, shaken hard so the pineapple foams, then soda to top.
  3. That pineapple foam is the drink's whole character and shaking is the only way to get it.
  4. Bitters over the top. Made properly it is dry, complicated and nothing like the pink thing on a cruise ship.

What the ingredients are actually doing

gin
Botanicals over a neutral base, and every bottle draws its own map — juniper-forward gin makes a bracing drink, a softer modern one makes a floral one.
pineapple
Sweet and aggressively acidic, and the raw fruit contains an enzyme that breaks down protein — useful in a marinade, ruinous in anything set with gelatin.
lime
Sharper and more floral than lemon, and it fades faster — juice it the same hour you use it.
cointreau
Clean bitter orange with real sweetness behind it, so it does two jobs in a sour and lets you use less syrup.
soda
Carbonation is a texture and it is the first thing you lose.
