Method
- Halve the bananas lengthways and lay them flat face down in foaming butter. Do not move them for two minutes.
- Slightly underripe bananas hold their shape; very ripe ones collapse into the pan.
- Honey at the end, off the heat, so it glazes rather than caramelizing to a solid.
- Sesame seeds toasted separately in a dry pan, and lime over the top to stop it being flatly sweet.
