Method
- Brown the sausage hard and break it up. You want proper color and a good amount of rendered fat left behind.
- Flour over the meat and fat, cooked two minutes so it stops tasting raw.
- Milk in slowly, whisking. It will look wrong and thin and then it will not.
- Far more black pepper than seems sensible — this is a peppery dish pretending to be a creamy one. Loosen with milk before serving; it thickens as it stands.
