What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- cauliflower
- almonds
- tomato
- paprika
- red wine vinegar
Good if you have them, fine if you do not: olive oil.
Method
- Toast the almonds and the bread in oil before they go in the sauce. Untoasted, romesco tastes raw and thin.
- Char the peppers and tomatoes properly — blackened skins are where the sweetness comes from.
- Pulse rather than blend. Romesco should have texture; a smooth purée is a different sauce.
- Roast the cauliflower hard and dark, and put the sauce under it rather than over.

Why each of these is on the list
What the ingredients are actually doing
- cauliflower
- Bland when boiled, excellent when browned.
- almonds
- Fat and crunch, and toasting is not optional — raw almonds taste chalky and toasted ones taste like almonds.
- tomato
- Sweet, sour and savory at once, which is why it holds up so many dishes with no meat in them.
- paprika
- Color and a mild sweet pepper flavor, and it scorches into bitterness almost instantly.
- red wine vinegar
- The workhorse acid for anything savory and cooked.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

No heat. Blend or chop fine. Vinegar and garlic, then chill. It should taste like a salad you can drink, not salsa.
