Method
- Grate the cheddar yourself. Pre-grated cheese is coated in starch and it makes the whole thing chalky.
- Sharp cheddar, and less mayonnaise than a recipe usually says — it should be a cheese spread, not a mayonnaise one.
- Drain the peppers properly or it goes watery in the fridge overnight.
- Mash rather than blend, so it keeps some texture. Better on day two.
