Mapo eggplant
Same logic as mapo tofu: a little pork, chili oil, eggplant that collapses.

mediumWhy tonight. Same logic as mapo tofu: a little pork, chili oil, eggplant that collapses.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- eggplant
- pork
- soy sauce
- chili oil
- garlic
Good if you have them, fine if you do not: scallion.
Method
- Eggplant drinks oil, so either salt and drain it first or roast it separately before it meets the pan.
- Brown the pork hard until there are crisp bits, which is where the dish gets its savor.
- Chili oil off the heat at the end. Fried, it loses its aroma and just tastes hot.
- Fold the eggplant through gently. Stirred hard it collapses into the sauce and you lose the texture.

Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Why each of these is on the list
What the ingredients are actually doing
- eggplant
- A sponge, and that is the whole problem and the whole opportunity.
- pork
- The forgiving meat. Shoulder takes hours and rewards them, chops take minutes and punish you for one too many, and the fat is the flavor in both cases.
- soy sauce
- Salt with a savory backbone, so it seasons and deepens in one move.
- chili oil
- Heat suspended in fat, which spreads it further than dry chili can.
- garlic
- Burns in seconds and turns the whole dish bitter, so it almost never goes in first.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

If you bought for this, you can already make these
Shares pork, garlic, soy sauce
Garlic chili pork
Fish-fragrant without the fish: chili, garlic, a little vinegar. Loose ground pork.
Shares eggplant, chili oil, soy sauce
Eggplant mapo bowl
Mapo without the pork: eggplant and tofu, chili oil, garlic. It should be numbing-adjacent even without Sichuan pepper. Don't make a stir-fry.
Shares pork, soy sauce, chili oil
Mapo tofu
Soft tofu, a little pork for savor, chili oil. Don't boil the cubes apart.
Shares pork, soy sauce, chili oil
Twice-cooked cabbage
Collapse the cabbage first, then sear it hard with the pork. The second cooking is where it stops being a vegetable side.
Next
Cook it, then tell the shelf what you used.
