What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- chicken
- lime
- fish sauce
- garlic
- ginger
Good if you have them, fine if you do not: chili flakes, rice.
Method
- Marinate in the lime, fish sauce, garlic and ginger for at least thirty minutes — the acid does real work.
- Not much longer than an hour, though, or the lime starts to cure the surface and it goes chalky.
- Sear it hard and dry, having wiped the marinade off, or it steams in the liquid instead of browning.
- The rest of the marinade reduced separately into a sauce, and lime again at the table.

What the method is trying to make happen
Sequence, correction, heat and texture, equipment workarounds, scaling, and component reuse are available with this cook sheet.
An educational plan from a curated corpus. Not a nutrition, allergen, or doneness guarantee.
Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
The technique underneath this
- Pan sauceTurning what stuck to the pan into a sauce. Two minutes of work at the end of something you already cooked.watery · too salty · greasy · broken · bitter
- Roasting a whole birdTwo muscles that want different temperatures, cooked in one piece. Every method is a way of managing that conflict.dry breast · underdone thigh · flabby skin · burnt wingtips
Going wrong while you cook it? Say what it is doing and the triage will tell you what is happening, the smallest move, and the instinct to resist.
Published minimums for what is in this
These are published minimums, not doneness preferences and not a verdict about any particular piece of food. Ground meat sits above whole cuts of the same animal because grinding moves the surface through the middle — the species is not the reason.

Why each of these is on the list
What the ingredients are actually doing
- chicken
- Two different foods depending on the cut.
- lime
- Sharper and more floral than lemon, and it fades faster — juice it the same hour you use it.
- fish sauce
- Salt and deep savoriness, and it smells far stronger than it tastes once it is in something.
- garlic
- Burns in seconds and turns the whole dish bitter, so it almost never goes in first.
- ginger
- Bright and hot when raw, mellow and warm when cooked.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Thai grilled chicken without the grill: fish sauce, lime, garlic, a lot of pepper. Hot pan, char the edges. Cilantro after. Don't make teriyaki.

Tom kha gai
Coconut, lime, ginger, fish sauce — galangal would be right, ginger is Tuesday. Chicken in the broth, not boiled to shreds. Chili at the table. Don't make a yellow curry and call it tom kha.

Fish sauce slaw
The slaw that belongs on grilled meat.
Shares fish sauce, lime, garlic
Nuoc cham cucumber
Fish sauce, lime, sugar, garlic on cucumber. Chili if you want it. The dressing is the dish. Don't make a pickle.
