Method
- Season the rice with sesame oil and salt rather than vinegar — that is what separates kimbap from sushi.
- Every filling cooked and cooled separately, and each seasoned on its own.
- Spread the rice thin. A thick rice layer is why home rolls will not close.
- Roll tight, brush the outside with sesame oil, and let it sit two minutes before slicing with a wet knife.
