What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- apple
- flour
- honey
- cinnamon
- eggs
Good if you have them, fine if you do not: butter.
Method
- Caramelize the apples in butter and honey in the skillet first, then pour the batter over them.
- Do not stir them in. The layer at the bottom becomes the top when it is turned out.
- Mix the batter until the flour just disappears. Beaten batter makes a tough, tight cake.
- Rest it five minutes before inverting, but no longer, or the caramel sets and it welds to the pan.

Why each of these is on the list
What the ingredients are actually doing
- apple
- Sweet, acidic and firm, which is a rare combination — it holds its shape in a hot pan and cuts through fat on a cold plate.
- flour
- Thickener and structure. Raw flour tastes like paste, so it wants a minute of cooking in fat before liquid arrives — that minute is the difference between a sauce and a lumpy disappointment.
- honey
- Sweetness with a floral edge and enough body to change the texture of what it is in.
- cinnamon
- Warm and sweet-smelling without being sweet, which is why it works in a stew as readily as in a pastry.
- eggs
- The cheapest way to turn a side dish into dinner.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Honey cake
Lekach logic in a skillet. Coffee in the batter so it tastes like spice, not only honey. Orange zest if you have it. Better the next day.
Shares apple, cinnamon, honey
Cinnamon apples
Apples that have gone soft in the bowl. Cut them thick, color them properly, and the honey goes on off the heat so it glazes.

Loukoumades
Honey puffs without a fryer: small batter cakes, honey while hot, cinnamon. They should soak, not sit dry. Don't make pancakes.

Apple yogurt
Sliced apple, yogurt, a thread of honey. Cinnamon if you want pie. It is breakfast, not a parfait project.
