What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- flour
- butter
- eggs
- milk
- cheddar
Good if you have them, fine if you do not: black pepper.
Method
- Cook the flour paste on the heat for a full two minutes, stirring, until it pulls away from the pan.
- That drying step is what lets it take the eggs and puff. Underdone paste makes flat, damp puffs.
- Cool it slightly, then eggs one at a time, beaten in completely. It should fall from the spoon in a thick ribbon.
- Hot oven, and do not open the door for twenty minutes. Every peek collapses them.

Why each of these is on the list
What the ingredients are actually doing
- flour
- Thickener and structure. Raw flour tastes like paste, so it wants a minute of cooking in fat before liquid arrives — that minute is the difference between a sauce and a lumpy disappointment.
- butter
- Flavor and body in the same spoonful.
- eggs
- The cheapest way to turn a side dish into dinner.
- milk
- Softness and a little sweetness.
- cheddar
- Sharpness plus melt. Aged cheddar tastes like more and melts like less, so a dish that wants both usually wants a mix — grate it, do not slice it, and take the pan off the heat before it goes in.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
