Method
- One part rice to at least eight of liquid, and an hour and a half at a bare simmer. The ratio is what makes it congee.
- Stir it now and then to break the grains down. The starch coming out is the entire texture.
- Ginger goes in at the start and cooks all the way through; scallion goes on at the end raw.
- Season only at the table. Congee is a canvas and the toppings do the seasoning.
