Method
- Rice noodles are soaked or briefly boiled, never treated like pasta. Overcooked by a minute they turn to mush and there is no recovery.
- Rinse them cold the moment they are done so they stop cooking and shed their starch.
- Eggs scrambled soft in a separate pan and pulled early — they will warm through again in the noodles.
- Chili oil, soy and sesame tossed through off the heat, eggs folded in last. Scallion and sesame seeds on top.
