mediumWhy tonight. Pound thin, dredge, fry, milk gravy in the same pan. Pepper is the seasoning.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- beef
- flour
- eggs
- milk
Good if you have them, fine if you do not: black pepper.
Method
- Pound the steak thin and dredge twice: flour, egg, flour again, resting ten minutes between.
- That rest lets the coating hydrate and grip. Skipping it is why the crust slides off in the pan.
- Shallow-fry in oil at 175C, and drain on a rack rather than flat.
- The gravy is made in the same pan from the fat and browned bits, with milk whisked in slowly. Black pepper heavily.

Why each of these is on the list
What the ingredients are actually doing
- beef
- Fat and connective tissue decide the method.
- flour
- Thickener and structure. Raw flour tastes like paste, so it wants a minute of cooking in fat before liquid arrives — that minute is the difference between a sauce and a lumpy disappointment.
- eggs
- The cheapest way to turn a side dish into dinner.
- milk
- Softness and a little sweetness.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Æbleskiver
Danish pancake balls without the pan: small batter cakes, berries in the middle, sugar. They should be custardy inside. Don't make muffins.

Dutch baby
Hot skillet, rest the batter, oven. Lemon and sugar at the table.

Kaiserschmarrn
Torn pancake, not a stack. Sugar in the pan so the shards caramelize. Berries, not syrup. It should be a mess on purpose.

Lemon sugar crêpes
Thin batter, rest, swirl. Lemon and sugar are a complete filling.
