Method
- Simmer the pineapple skins and a cinnamon stick in water for twenty minutes, then strain and cool.
- The skins are the whole point — they carry more aroma than the flesh and they are usually thrown away.
- Sugar to taste while it is warm, lime once it is cold.
- Serve it very cold over ice. It is sweet, spiced and completely unlike anything else in a glass.
